Anybody have leftovers from Taco Tuesday?
For some strange reason I made a ton of taco meat this week (hamburger and chicken). Couldn’t possibly be that I got such a great deal on meat at my new fav store (Aldi), now could it?
Anyway, so last night I was looking for something quick and easy. I pulled some leftover ground round and some chicken tenders (already fully cooked and smothered in taco seasoning). Put everything on a baking sheet, added some cheese and popped in the oven for about 10 minutes.
BOOM!
Nachos in a jiffy. Tossed on some tortillas triangles and all the normal fixings and it was ready to serve.
My son was super impressed. His exact comment was, “This junk is good.” Now, on any other occasion, calling the meal I just prepared “junk” would have bothered me but when he ate two plates and asked me to serve it to his friends this weekend…I knew I had a #momwin.
After dinner, I whipped up some caramel apple nachos with caramel sauce, heath bar crumbles and mini choco chips. My daughter devoured them. She is my sweet eater. She’d live off chocolate and marshmallows if I would let her.
Moral to this story… always make extra on Tuesday and your Thursday will be as easy as toss, heat and serve.
