Summer Chicken Carbonara

I am still on a pasta kick.

OK…I am not. To be honest, I am just doing it for my son.

Remember I told you last week he asked for more pasta dishes, well…I am TRYING.

I am also trying to come up with some new recipes to add to our weekly lineup, as well as, some comfort food ideas for the winter.

AGAIN…this recipe idea was spur of the moment. I pulled something similar up on Pinterest, adapted it to my liking and went to the grocery.

Let be honest, when I take my little, I must shop fast so fortunately, this only required a few ingredients that I didn’t already have.

I didn’t take step by step pictures. SORRY…I know I am slacking, but I was in a hurry to get dinner on the table and wasn’t sure it was worthy of blog but it totally was.

Luckily, this dish was fast easy and delicious. My son didn’t like it as well as the Spicy Italian Sausage Creamy Parmesan Rigatoni, but he still ate it up! WIN FOR MOM!

Summer Chicken Carbonara

Ingredients

  • ½ lb bacon
  • 2 tbsp butter
  • 2-3 chicken breasts
  • Salt and pepper to taste
  • 1 12 oz box bowtie pasta
  • 1 cup chicken broth
  • 3 tbsp flour
  • 3 tbsp minced garlic
  • ¼ cup heavy cream
  • ¾ cup milk
  • ¾ cup shredded parmesan
  • 2 tbsp fresh parsley

Instructions

  1. Cook bacon, dice and set aside.
  2. Cook chicken breasts in 2 tablespoons butter. Salt and pepper to taste.
  3. Drain and set chicken aside. (I sliced my chicken into bite sized pieces.)
  4. In the meantime, cook bowtie pasta according to package directions. (I cooked mine for about 13 minutes and it was perfect.)
  5. Sauté minced garlic for 1-2 minutes.
  6. Add milk, heavy cream, chicken broth, and flour to the pan with the garlic.
  7. Whisk until smooth.
  8. Cook on medium to low heat until sauce thickens.
  9. Add parmesan to sauce once it has thickened. If sauce gets too thick, add a little chicken broth to thin it out without losing flavor.
  10. Add cooked and drained bowtie pasta.
  11. Toss pasta and sauce together.
  12. Add parsley and stir.
  13. Mix in diced chicken and bacon.
  14. Toss until everything is covered with sauce.
  15. Add salt and pepper to taste.
  16. Serve hot.
  17. Enjoy.
