Weeknight Warriors Meal

Weeknights can be tough.  

If you don’t have errands to run, grocery visits to make or kids to chauffeur somewhere, are you even living?

It seems like we get caught up in something every night.  On the off chance we are free”, we always end up soaking up every last drop of daylight that we can.

Because I don’t have much time to cook, I’ve been looking for quick, simple ideas to satisfy the troops.

This easy beef enchilada meal seems to always be a hit.

Brown a little ground beef.

Pour in some enchilada sauce.

Mix in a little cheese.

Spoon mixture into 6 in flour tortillas.

Place rolled tortillas in baking dish.

Cover with remaining enchilada sauce and cheese.

Bake.

Enjoy!!!

Oh yea…forgot to take a picture of the lettuce.  My fam could eat there weight in lettuce daily so we always toss a little on the top (plus….it makes it pretty) when we dish it out.

Easy peasy lemon squeezy yall!

The kids are happy.  Momma is happy!

Easy Enchiladas

Ingredients

  • 1 lb lean ground beef
  • 1 can Old El Paso enchilada sauce 19 oz
  • 1 1/2 cups shredded cheese (6 oz) I use Colby Jack.
  • 1 pkg Old El Paso flour tortillas 6 inch

Instructions

  1. Preheat oven to 375 degrees.
  2. Lightly grease 13 X 9 baking dish.

  3. Brown beef over medium heat in skillet and drain.  Return beef to skillet.

  4. Add 3/4 cup enchilada sauce to beef.

  5. Add 1 cup cheese and stir. 

  6. Remove from heat.

  7. Spoon enchilada mixture into flour tortilla.

  8. Roll.

  9. Place in baking dish with seam facing down.

  10. Repeat!

  11. Pour remaining enchilada sauce on rolls.

  12. Sprinkle remaining cheese on top.

  13. Bake 15-20 minutes at 375 degrees until heated through.
