Old Fashioned Southern Sugar Cake

An old fashioned cake like your grandma used to make that can be topped with almost anything.  Yummy and delishious and perfect for Spring.

Ingredients

  • 1/2 cup Vegetable Shortening
  • 1 cup Milk I used 2%
  • 1 1/2 tsps Vanilla Extract
  • 1 tsp Salt
  • 4 tsps Baking Powder
  • 1 1/2 cups Sugar Granulated
  • 2 Cups All Purpose Flour PLUS...2 Tablespoons
  • 4 Egg whites Large
  • Powdered sugar for the top

Instructions

  1. 1.  Preheat oven to 350 degrees F.

    2. Cream together milk, shortening, and vanilla for a few minutes with a mixer with a paddle attachment.

    3. In a separate bowl, mix flour, baking powder, salt, and sugar.

    4.  Mix in flour until well incorporated (1/3 at a time). 

    5.  Mix in egg whites until combined (do not overmix).

    6. Oil your 10 in cast iron skillet and pour in batter.

    7.  Bake 40-45 minutes.  Serve with powdered sugar and a few fresh strawberries on top.  I also made a simple powdered sugar icing to finish it off.
